Mediterranean Damper

INGREDIENTS:
 

  • 4 cups self raising flour

  • 2 tsp baking powder

  • pinch of salt

  • 100g butter

  • 1/2 cup of milk

  • 1/2 cup milk

  • 1/4 cup sliced olives

  • 1/4 cup chopped sundried tomatoes

  • Salami

  • Shredded cheese

  • 2 tbsp pesto

METHOD:

  1. In a bowl combine flour, baking powder and salt then rub butter into flour mixture with fingers. Add milk and water to make a soft, sticky dough.

  2. Lightly flour a chopping board or flat surface, knead and roll the dough with a floured rolling pin to form a flat dough roughly 1-2cm thick.

  3. In the middle of the dough mixture add the pesto, olives, sundried tomatoes, salami and cheese placing it in a circle leaving approximately 5cm from the edges and the middle. 

  4. Stretch and fold the edges into the centre combining with a fork in the middle.This will create a donut type shape damper. Baste the damper with leftover milk to create a golden outside.

  5. Place the damper on a baking paper lined trivet and in the camp oven for about 35-40 minutes. 

  6. Cut and Enjoy!
